Green Chile Rellenos
“Rellenos” means stuffed in Spanish. This recipe calls for a cheese and sausage stuffing but you can stuff them with different meats and cheeses.
* 12 Large NM Big Jim Chiles roasted, peeled with stems
* To prepare chile open a small slit below the stem and remove seeds.
* ½ Lb of Munster cheese
* ½ Lb of Cheddar cheese
* 1 small NM sweet onion finely diced
* 1 lb of sausage
* 4 eggs separated
* 2 Tbsp of flour
* ¼ tsp of salt
In a large skillet brown sausage and onions together. Be sure and break up sausage into small pieces. Drain well and set aside to cool. Once sausage is completely cool mix in cheeses. Stuff chiles with mixture. Next beat egg whites until stiff. Then beat egg yolks, flour and salt together. Slowly fold egg whites into mixture and be carefull not to over mix! Roll stuffed chiles in flour and dip into batter. Fry in cooking oil at 360 degrees until golden brown. Yields 6 servings.
